Smoked Salmon and Ham are popular at Nordic buffets.
Nordic countries enjoy a variety of meat and fish. The old tradition of curing meat is regained it's popularity. However, many traditional dishes (such as fish balls) are now easily obtained in prepared food sections of online and retail Nordic shops. Certain meats are only available locally from vendors* during the holidays such as potato sausage but if you find casings at your local butcher shop, you can also make your own.
Nordic countries are bordered by water and thus fish is a very popular menu item. Cod is used for many dishes such as those found below. Norway's famous Lutefisk, a special holiday treat served with butter (again, check out retail Nordic shops for this), is made with cod. Meatballs are always popular despite Ikea making it too easy for many cooks. Rollespølser makes a lovely hors d'oeuvres for special occasions. The Nordic countries also feature delightful stews and Fårikål is sure to please everyone (even those who don't like lamb!)!
